For all you bourbon lovers out there, we have another great distillery on the show to talk about their line of bourbons. This week we have the co-founder of Wilderness Trail Distillery, Dr. Patrick Heist, out of Danville Kentucky. Dr. Heist shares how Wilderness Trail emphasizes the use of locally sourced ingredients, and why they choose a slightly different process in mash and proof. We also discuss the importance of that perfect yeast combination during the fermentation stage, and Dr. Heist breaks down the science on several of the other distillation steps giving us a glimpse into the hard work that goes into making the amazing bourbon at Wilderness Trail Distillery.
